Indgredients for the perfect pancake:

  • 1 1/4 cups flour
  • 3 teaspoons baking powder
  • 1 tablespoon white sugar
  • 1/2 teaspoon salt
  • 1 beaten egg
  • 2 tablespoons salad oil
  • 1 cup milk

Combine the flour, baking powder, salt and sugar in a large bowl, sifting is nice but blending with a fork works. In another bowl, beat an egg and stir in the salad oil (or corn, canola, soy, etc), and add the milk. Add the milk mixture to the dry indgredients; mix until pretty smooth, but don't overdo it.

Heat a lightly oiled griddle or frying pan over medium high heat until drops of water dance on the pan - hot, but not burning the oil. Scoop the batter onto the griddle, silver dollar size and up. Large pancakes (more than a half cup of batter) can be hard to turn and cook clear through. Brown on both sides and serve hot with butter, syrup, marmalade, or your favorite topping.
